Classic Ceylon Cinnamon Banana Bread

Ingredients

  • 250 g (2 cups) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • ½ tsp salt
  • 120 g (½ cup) unsalted butter, melted and slightly cooled
  • 150 g (¾ cup) light brown sugar, packed
  • 2 large eggs, at room temperature
  • 3 medium ripe bananas (about 300 g peeled), mashed
  • 60 ml (¼ cup) milk, at room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 175 °C (350 °F). Lightly grease or line a 9×5-inch loaf pan with baking parchment.
  2. In a medium bowl, sift together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  3. In a large mixing bowl, whisk melted butter and brown sugar until smooth and well combined.
  4. Whisk in the eggs, then add mashed bananas, milk, and vanilla extract, mixing until combined.
  5. Gently fold the dry ingredients into the wet mixture until just combined — do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–55 minutes, or until a skewer or toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
