Creamy Ceylon Cinnamon Rice Pudding

A rich and comforting dessert made with creamy milk, tender rice, and the delicate sweetness of pure Ceylon cinnamon powder. Perfect served warm or chilled.

Ingredients

  • 100 g (½ cup) uncooked short-grain rice

  • 500 ml (2 cups) whole milk

  • 250 ml (1 cup) water

  • 75 g (⅓ cup) sugar

  • 1 ½ tsp pure Ceylon cinnamon powder (divided)

  • ½ tsp vanilla extract (optional)

  • Pinch of salt

  • Ground nutmeg or extra cinnamon for garnish (optional)

Instructions

  1. In a medium saucepan, combine the rice, water, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.

  2. Add the milk, sugar, and 1 tsp of Ceylon cinnamon powder. Continue cooking over low heat for 25–30 minutes, stirring often, until the rice is tender and the mixture thickens.

  3. Stir in the vanilla extract and the remaining ½ tsp of Ceylon cinnamon powder.

  4. Remove from heat. Serve warm for a cosy treat or chill in the fridge for at least 2 hours for a refreshing dessert.

  5. Sprinkle with a pinch of nutmeg or more cinnamon before serving, if desired.
