Ceylon Cinnamon vs. Cassia Cinnamon

Not all cinnamon is the same. The cinnamon you see in most UK supermarkets is often Cassia cinnamon (mainly from China, Vietnam, or Indonesia). While Cassia has a strong, spicy flavour, it also contains high levels of coumarin, a natural compound that can be harmful if consumed in large amounts.

Ceylon Cinnamon known as Cinnamomum verum or “true cinnamon” is gentler, sweeter, and far lower in coumarin. Its delicate flavour elevates both sweet and savoury dishes without overpowering them.

How do I know it’s real Ceylon cinnamon?

Look for the lighter colour, delicate quills made of multiple layers, and sweet aroma — all signs of the real thing.

Ceylon cinnamon is rare, labour-intensive to produce, and almost entirely grown in Sri Lanka. Its unique flavour and low coumarin content make it highly valued worldwide.

While it won’t “go bad” quickly, cinnamon’s flavour is best enjoyed within 18–24 months for sticks and 12–18 months for powder.
